In the food industry, it serves as a preservative and antioxidant (E221), inhibiting browning reactions in dried fruits, wines, and processed foods. It is also utilized in photographic developers, as a reducing agent in textile bleaching, and in the production of other chemicals like sodium thiosulfate. The compound acts as a mild reducing agent, which is central to its function in scavenging oxygen and reducing oxidizing agents. It should be stored in a cool, dry, airtight container away from strong acids and oxidizers, as it can release toxic sulfur dioxide gas upon decomposition.
