    Product Description:
Disodium dihydrogen diphosphate, also known as sodium acid pyrophosphate (SAPP), is an inorganic compound with the chemical formula Na_H_P_O_. It appears as a white, odorless crystalline powder and is highly soluble in water. Structurally, it is a sodium salt of pyrophosphoric acid, characterized by a P-O-P linkage. Its primary application is as a leavening acid in the food industry, where it reacts with sodium bicarbonate to release carbon dioxide gas, causing dough to rise in baked goods like cakes, pancakes, and donuts. It also functions as a sequestrant, buffering agent, and color stabilizer in processed foods, such as preventing discoloration in potatoes and seafood. In industrial settings, it is used as a dispersing agent in ceramics and paints, and as a corrosion inhibitor in water treatment. SAPP is generally recognized as safe (GRAS) by the FDA when used in accordance with good manufacturing practices. It is also utilized in toothpaste as a tartar control agent. Its ability to control pH and chelate metal ions makes it a versatile additive across both food and industrial sectors.
